Eden's Quick Christmas Cake

Quick Christmas Cake

 500 ml fruit juice
1kg mixed fruit
* Soak overnight
Mix in 2c self raising flour, mixed spice and any essences you like.
Bake 1 and a half hours at 160 degrees C (fan bake).
